I’m feeling very privileged today to own a business in the great Pacific Northwest. I filled the smoker with fresh Albacore tuna and alder wood chips this morning. There’s a little over 13 pounds in there so we should have plenty to do a few different things with. I’m definitely thinking some smoked tuna raviole are in the future.
