Check back tomorrow to see what will be happening with our specials for the weekend. House-smoked Albacore tuna and fresh local produce paired up just for you all!
I’m feeling very privileged today to own a business in the great Pacific Northwest. I filled the smoker with fresh Albacore tuna and alder wood chips this morning. There’s a little over 13 pounds in there so we should have plenty to do a few different things with. I’m definitely thinking some smoked tuna raviole are in the future. If there is anything else any of you would like to see as a special with smoked tuna feel free to leave ideas in the comments here. Tonight’s special is cumin/ coriander rubbed Albacore tuna loin pan-roasted and served with a smoke-roasted tomato coulis and Spanish tortilla.
The special tonight will be Albacore tuna loin crusted with sesame seeds and black pepper, pan seared medium rare and served over couscous with julienned carrot, parsnip, onion and fresh corriander tahini dressing.
We received a shipment of fresh tuna this morning! For lunch it’s an Albacore, caper and aioli salad served over couscous tossed with extra virgin olive oil, cucumber, tomato and onion.
